“Scookies”

Hey everyone! I wanted to share this recipe that I made for Mother’s Day with all of you. I hope you enjoy it and recreate it yourself!

I was attempting to make Joanna Gaines’ orange scones using her recipe below:

But instead of using flour, baking powder, baking soda, and salt; I ended up using 2 cups of Bisquick instead. It’s the stuff in the yellow box that you use for pancakes! The recipe remains the same otherwise.

When you get to the shaping part, it’s going to be a VERY sticky dough. Flour your surface, the dough itself, and your hands. Once you cut your round, the shape of each piece of dough will be more of a blob “shape” as opposed to a triangle.

I called them “scookies” because they have the test and texture of a scone, but the shape and flatness of a cookie—hence, a “scookie!” I served these with lemon curd, raspberry jam, and whipped cream; but you could serve them with whatever toppings you want or eat them plain. Like James Joyce said, “Mistakes are the portals of discovery,” therefore, I discovered a new baked good and am sharing it with all of you! I hope you all try this recipe and do some good cooking, especially during this pandemic, to bring some adventure into your life. ❤️☺️
