Lemon Coconut Trifle

Lemon is my favorite flavor, hands down. I love lemonade, lemon meringue pie, anything with lemon is my jam. We recently had friends over for a casual dinner party, and what sort of dessert did I make, you ask? Well, of course a lemon dessert! I made this recipe up, and it’s pretty simple.


Take a box of lemon cake mix from your grocery store (no shame in using boxed mixes) and bake as directed. Then, make this lemon curd in the microwave that only take minutes compared to traditional methods (Go to allrecipes.com and search “microwave lemon curd). Finally, whip up some heavy whipping cream with powdered sugar for your own delicious, home-made, fluffy goodness (it’s better than the canned stuff, trust me). Once you have all three elements prepared, it’s time for assembly.


In a glass trifle bowl (or any clear bowl if you don’t have a trifle bowl), cut a round or square of cake to fit in the base. Then, cut smaller pieces to wedge in the sides so there are no gaps. Then, pour a layer of lemon curd over the top of the cake. Then, spoon on the whipped cream and spread into a flat layer. Sprinkle with a layer of shredded sweetened coconut. Repeat this pattern until you reach the top of the bowl.
