Taco Tuesday!

Today is Tuesday, and what does that mean? It means it’s the day to eat tacos! Who doesn’t love Taco Tuesdays!? Truth be told, I actually made these last Friday for dinner, but Taco Friday doesn’t have the same catchy ring like Taco Tuesday does. Here is my recipe for some SERIOUSLY TASTY (and healthy) fish tacos and two accompanying salsas that are perfect for the occasion (or any day of the week). Enjoy!

Fish Tacos (featured image):

  • Small corn tortilla (flour works too)
  • Wild dover sole (any white fish will do, such as sole, cod, tilapia, etc.)
  • Plain Greek yogurt with lime and chile powder mixed in (or sour cream)
  • Mashed avocado (or guacamole)
  • Crumbled queso fresco (or cotija, pepper jack, etc.)
  • Cabbage and lettuce mix
  • Shredded carrots
  • Cilantro

Tomato and Corn Salsa (left):

  • 3 “off the vine” tomatoes, diced (any tomato is fine, plum works too)
  • 1 can yellow corn (make sure to drain)
  • 1/2 white onion, diced
  • Juice of 1/2 a lime
  • 3-4 sprigs cilantro, coarsely chopped
  • Salt, pepper, and cayenne to taste

Mango Salsa (right):

  • 1 mango, cubed
  • 1/2 red onion, diced
  • Juice of 1/2 a lime
  • 3-4 sprigs cilantro, coarsely chopped
  • Salt, pepper and cayenne to taste

All three recipes are relatively easy and quick to make, so it’s great for a quick weeknight supper or for a fun weekend dinner! Some tips:

  • Corn tortillas are fragile, so try not to get them too wet with the salsas and sour cream. Otherwise, the tacos get messy (but are still fun to eat)!
  • The fish cooks quickly, it only needs about 2 minutes on each side to cook it. Don’t overcook your fish, otherwise it’s not as palatable. I also recommend getting wild fish (like dover sole) as opposed to farmed fish (like most tilapia) because it’s fresher and just tastes better. Make sure to season your fish as well with S&P.
  • Plain Greek yogurt is a great healthy substitute for sour cream; however, if you’re making these for a party, serve sour cream. Same goes for the mashed avocado-serve guacamole (Wholly Guacamole is a great choice).
  • Look for a bagged cabbage/lettuce mix. I found one at my local Safeway specifically for tacos. It’s so much easier than cutting up cabbage and lettuce, and it’s the same thing. Same with the shredded carrots, it will save you prep time.
  • Many stores sell pre-cut mango; opt for this instead of whole mangoes because it reduces prep time (however, it may cost more).
  • If you have trouble cutting onions like I do, many grocery stores have all ready prepared chopped onions, both white and red. If they don’t offer this at your local grocery store, 1) I’m sorry because cutting onions is the worst kitchen task, 2) Suggest your grocery store gets these products ASAP, and 3) Good luck!
  • TASTE TASTE TASTE. Especially the salsas. No one wants an overly acidic or salty salsa. Start with a little, then add more if necessary. It’s always easy to add more, but once you’ve added it, it’s nearly impossible to go backwards.
